Abelskiver highlight of Danish-style breakfast

Annual breakfast helps Our Saviour’s Lutheran Church raise money for missions and projects

HUMBOLDT - Delicious, tasty, light and fluffy - they're all words parishioners at Our Saviour's Lutheran Church used to describe the church's annual abelskiver breakfast.

Around 200 people came to enjoy the traditional Danish Breakfast at Our Saviour's, 1212 Sumner Ave. NW, Sunday morning, which is centered around the abelskiver, a round Danish breakfast food similar to pancakes.

The church maintains some Danish roots from parishioners who came to the church after the Danish Trinity Lutheran Church closed, but the main reason for making them is because "they're just delicious," said Alice Severson, whose mother made the special dish for her when she was younger, and brought the recipe to the church.

Severson got the idea for holding the church breakfast eight years ago from when she used to make them at the Gilmore City Legion.

While there's no secret to the dish, there is a trick to their special texture, according to Diane Amundson, committee member for the church's mission endowment fund.

"We mix the egg whites separate and mix in the batter, so it's very light and fluffy," said Amundson.

They're traditionally served with syrup, jam or brown sugar, she said.

Besides being "just delicious," the abelskiver also does its part for the church in raising money for the Our Saviour's Mission Endowment fund.

"In the past a lot of money went to projects in Africa, but this year we're helping renovate a cabin in Okoboji belonging to a Lutheran bible camp." said Amundson.

The money raised will also help fund a youth trip to Philadelphia, where a group of around eight teenage parishioners will spend a week fixing up houses and helping inner city communities, according to Pastor Matthew Manz.

"It's going to be an immersion experience for them," said Manz.

The church holds its annual breakfast around the same time every year, with all the money going towards projects like those.
